Lactic acid is a substance found in many of the foods we eat daily. It appears as a colorless or slightly yellow transparent liquid with a particularly mild, lingering sour taste. It has a slight volatility and readily absorbs moisture from the air. Its primary function is to adjust acidity. As an acidulant, its sourness is not harsh but very well-balanced. When added to soft drinks, fruit juices, and dairy products we consume, it adjusts the pH to an optimal level, resulting in a smoother, more pleasant taste. Furthermore, it acts as a preservative; by lowering the food's pH, it creates an acidic environment that inhibits the growth of harmful microorganisms.
